Georgian Khachapuri with a Spicy Twist

Khachapuri, a traditional Georgian cheese bread, is a staple in Georgian cuisine, loved for its rich, cheesy flavour and comforting texture. In this recipe, we introduce a spicy twist with the addition of adjika chilli paste, elevating the classic dish to a new level of flavour.


The combination of melted cheese and the aromatic, fiery notes of adjika chilli paste creates a truly unforgettable culinary experience perfect for hosting guests, or enjoying in PJs on the sofa!


Ingredients:

  • For the Dough:

  • 500g all-purpose flour

  • 7g dry yeast

  • 1 tsp sugar

  • 1 tsp salt

  • 250ml warm water

  • 2 tbsp olive oil

  • For the Filling:

  • 400g mozzarella cheese, grated

  • 200g feta cheese, crumbled

  • 1 egg

  • 3 tbsp adjika chilli paste

Instructions:

  1. Prepare the Dough:

  • In a large bowl, combine the flour, yeast, sugar, and salt.

  • Add the warm water and olive oil, mixing until a dough forms.

  • Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

  • Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.

  1. Prepare the Filling:

  • In a bowl, combine the mozzarella, feta, egg, and adjika chilli paste.

  • Mix until well combined and set aside.

  1. Assemble the Khachapuri:

  • Preheat the oven to 220°C.

  • Divide the dough into four equal parts and roll each into a circle.

  • Place a quarter of the cheese mixture in the centre of each dough circle.

  • Fold the edges of the dough over the filling, leaving a small opening in the centre.

  • Pinch the edges to seal the filling inside.

  1. Bake:

  • Place the khachapuri on a baking sheet lined with parchment paper.

  • Bake for 15-20 minutes or until the dough is golden brown and the cheese is melted and bubbly.

  • Serve hot, garnished with an extra dollop of adjika chilli paste if desired.
