Ingredients:
For the Dough:
500g all-purpose flour
7g dry yeast
1 tsp sugar
1 tsp salt
250ml warm water
2 tbsp olive oil
For the Filling:
400g mozzarella cheese, grated
200g feta cheese, crumbled
1 egg
3 tbsp adjika chilli paste
Instructions:
Prepare the Dough:
In a large bowl, combine the flour, yeast, sugar, and salt.
Add the warm water and olive oil, mixing until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Prepare the Filling:
In a bowl, combine the mozzarella, feta, egg, and adjika chilli paste.
Mix until well combined and set aside.
Assemble the Khachapuri:
Preheat the oven to 220°C.
Divide the dough into four equal parts and roll each into a circle.
Place a quarter of the cheese mixture in the centre of each dough circle.
Fold the edges of the dough over the filling, leaving a small opening in the centre.
Pinch the edges to seal the filling inside.
Bake:
Place the khachapuri on a baking sheet lined with parchment paper.
Bake for 15-20 minutes or until the dough is golden brown and the cheese is melted and bubbly.
Serve hot, garnished with an extra dollop of adjika chilli paste if desired.
