Roasts are a weekend family staple - we love gathering all together on a Sunday to enjoy lunch, catch up, and end the week on a high note. One of our favourite meats to enjoy is a whole roast chicken - and of course we add a little spice to the traditional recipe!


Here's how to recreate your own juicy roast chicken with perfectly crispy and slightly spicy skin!


Ingredients:


  • 1 whole large chicken

  • 4 tablespoons Happy Adjika (adjust to taste - we like it spicy!)

  • 2 tablespoons olive oil

  • Fresh herbs for garnish (rosemary, thyme, or parsley work well)


Instructions:


1. Preheat Your Oven:

  • Preheat your oven to 190°C. This ensures a perfect roast with crispy skin and juicy meat.

2. Prepare the Chicken:

  • Make sure your chicken is clean and patted dry. Truss the chicken if desired, but it's not mandatory.

3. Create the Adjika Rub:

  • In a small bowl, mix 4 tablespoons of Happy Adjika with 2 tablespoons of olive oil. This creates a flavorful paste that will be the star of your dish.

4. Season the Chicken:

  • Gently lift the skin of the chicken to create pockets without tearing it. Rub the Happy Adjika mixture evenly under the skin, ensuring that it covers as much of the meat as possible. Massage the remaining mixture over the outside of the chicken.

5. Place in the Oven:

  • Transfer the seasoned chicken to a roasting pan or oven-safe dish. For an extra burst of flavour, add a few sprigs of fresh herbs like rosemary or thyme.

6. Roast to Perfection:

  • Roast the chicken in the preheated oven for approximately 20 minutes per pound, plus an additional 15 minutes. Ensure the internal temperature reaches 74°C in the thickest part of the thigh.

7. Rest Before Serving:

  • Once out of the oven, let the chicken rest for 10-15 minutes before carving. This allows the juices to redistribute, ensuring a succulent and juicy result.

9. Garnish and Serve:

  • Garnish your beautifully roasted chicken with additional fresh herbs for a touch of elegance. Carve and serve with your favourite roast sides like greens, potatoes, and Yorkshire puddings!
