Ingredients:
250g jumbo pasta shells
1 small pumpkin or butternut squash, peeled, seeded, and cubed
2 tablespoons olive oil
1 onion, finely chopped
3 tablespoons green adjika chilli paste
200g ricotta cheese
100g grated Parmesan cheese
1 egg, beaten
500ml marinara sauce
Fresh basil leaves for garnish
Instructions:
Prepare the Pumpkin: Preheat your oven to 200°C. Toss the pumpkin cubes with 1 tablespoon of olive oil. Spread on a baking sheet and roast for 25-30 minutes, until tender and caramelised. Once roasted, mash the pumpkin with a fork or blend until smooth.
Cook the Pasta Shells: In a large pot of salted boiling water, cook the pasta shells according to the package instructions until al dente. Drain and set aside.
Prepare the Filling: In a pan, heat the remaining olive oil over medium heat. Add the onion, sautéing until soft and fragrant. In a large bowl, combine the mashed pumpkin, sautéed onion, green adjika chilli paste, ricotta cheese, Parmesan cheese, and beaten egg. Mix well to combine.
Stuff the Shells: Fill each pasta shell with the pumpkin and adjika mixture.
Assemble the Dish: In a baking dish, spread a thin layer of marinara sauce on the bottom. Arrange the stuffed shells on top of the sauce, then pour the remaining marinara sauce over the shells.
