Ingredients:

  • 1 whole ham joint (bone-in or boneless)

  • 3 tbsp Happy Adjika Red Chilli Paste

  • 2 tbsp honey

  • 2 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar

  • Cloves for studding


Instructions:

  1. Preheat your oven to 180°C.

  2. Prepare the ham by scoring the fat in a diamond pattern. Stud with cloves for added aroma.

  3. In a bowl, mix red adjika, honey, mustard, and vinegar to create a glaze.

  4. Place the ham in a roasting tray. Brush the glaze generously over the ham.

  5. Roast for 1.5–2 hours, basting with glaze every 20 minutes, until the ham is caramelised and golden.

  6. Let it rest for 10 minutes before slicing and serving.
