Svanetian Salt BBQ Smashed Potato Skewers with Herby Yogurt

When summer BBQ season arrives, there are always the obvious stars: burgers, sausages, maybe a few chicken skewers if someone is feeling organised. But often it is the side dishes that people remember most. The smoky potatoes with the crisp edges. The bowl of something tangy and herby that everyone keeps going back for. The little unexpected dish that quietly steals the whole show.
Traditionally made in the mountain region of Svaneti, Svanetian Salt is much more than ordinary salt. It is a bold, fragrant Georgian salt blend that seasons food with extra complexity and savoury depth. That makes it ideal for BBQ cooking, where ingredients are often simple and the best recipes come from getting the seasoning exactly right.
These potato skewers are ideal because they hit so many of the right notes for summer. They are crisp at the edges, soft in the middle, smoky from the grill, and incredibly good with a cool herb-flecked yogurt alongside. They look playful and modern enough for a summer table, but they are easy enough to pull off on a casual weekend with very little stress.
They are also endlessly useful. Serve them with grilled chicken, steak, fish, burgers, or kebabs. Put them on a vegetarian BBQ spread with salads and dips. Or make them the whole event with a big bowl of yogurt, chopped herbs, and a crunchy tomato salad on the side.

Ingredients
750 g baby potatoes
2 tbsp olive oil
200 g Greek yogurt
Small bunch dill
Small bunch parsley or mint
1 garlic clove, grated
1 lemon
Black pepper
Wooden or metal skewers
Method
Bring a pan of salted water to the boil and cook the baby potatoes for around 15 minutes, or until tender. Drain and allow them to steam dry for a few minutes.
Place the potatoes on a tray or board and gently press each one with the bottom of a glass until lightly smashed but still holding together.
Drizzle with olive oil and sprinkle generously with Svanetian Salt. Thread onto skewers.
Place the skewers on a hot BBQ and cook for around 8 to 10 minutes, turning occasionally, until golden, crisp around the edges, and lightly charred.
Meanwhile, make the yogurt dip by stirring together the Greek yogurt, chopped dill, parsley or mint, grated garlic, a squeeze of lemon juice, and black pepper.
Serve the potato skewers hot from the grill with the herby yogurt spooned alongside and a little extra Svanetian Salt over the top if you like.
