Method
In a bowl, mix the olive oil, Khmeli Suneli, grated garlic, and lemon juice. Add the chicken thighs and toss to coat well. Leave for at least 20 minutes if you have time.
Grill the chicken on a hot BBQ for around 5 to 6 minutes on each side, or until cooked through and nicely charred. Remove from the heat and rest for a few minutes before slicing.
To make the salad, combine the cucumber, spring onions, herbs, lemon juice, and olive oil in a bowl and toss together.
Warm the flatbreads on the BBQ for a few seconds on each side. Spread with a little yogurt, top with sliced chicken and cucumber salad, then finish with extra herbs and lemon wedges.
