Ingredients (serves 4):

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 2 carrots, diced

  • 2 garlic cloves, minced

  • 1 tsp Happy Adjika Dry Seasoning

  • 200g red lentils

  • 1L vegetable stock

  • 1 jar of Satsebeli

  • Fresh coriander for garnish


Instructions:

  1. Heat olive oil in a large pot. Sauté onion, carrots, and garlic until softened.

  2. Stir in the dry adjika seasoning and cook for 1 minute to release the spices.

  3. Add lentils, stock, and Satsebeli. Bring to a boil, then reduce to a simmer.

  4. Cook for 20–25 minutes, stirring occasionally, until lentils are tender.

  5. Blend half the soup for a creamy texture and garnish with fresh coriander.
