In bygone eras, Abkhazians meticulously crafted Ajika using a special stone mortar known as ahaqj’a, alongside a pestle called apkhnyga. With painstaking precision, they ground hot peppers, garlic, and spices to a pliable consistency, creating a fragrant and fiery concoction. Despite the availability of modern appliances, many still prefer the traditional method, believing it imparts a unique depth of flavour and aroma.

Traditional Abkhazian Ajika is a laborious process, requiring patience, skill, and unwavering dedication. From harvesting ripe red peppers to meticulously grinding them on the stone mortar, every step is a testament to the region's rich cultural heritage.
