Embrace the bounty of autumn with this vegetable tray bake, made extra special by tossing the roasted veggies in a delicious Green Adjika butter. Simple, earthy, and full of flavour, this dish makes for a perfect side or vegetarian main.
Ingredients:
4 new potatoes, peeled and quartered
2-3 parsnips and carrots, halved
Handful of radishes, halved
2 red onions, halved
3 tablespoons olive oil
3 tablespoons butter, softened
2 tablespoons Happy Adjika Green Adjika
Fresh thyme/rosemary for garnish
Instructions:
Roast the Veg: Preheat the oven to 200°C. Toss the veggies in olive oil, salt, and pepper. Spread them out on a baking tray and roast for 30-40 minutes, until tender and slightly caramelised.
Green Adjika Butter: In a small bowl, mix the softened butter with Green Adjika until well combined.
Finish the Bake: Remove the veggies from the oven and toss them with the Green Adjika butter while they’re still hot, so the butter melts and coats them evenly.
Serve: Garnish with fresh thyme or rosemary and enjoy this dish as a perfect autumnal side or a main course.
