Ingredients

  • 1 whole chicken, cut into 8 pieces

  • 2 tbsp olive oil

  • 1 cup whole milk

  • 4 garlic cloves, minced

  • 2 tbsp adjika

  • 1 tbsp butter

  • Salt & pepper to taste

  • Fresh coriander for garnish


Instructions

  1. Preheat your oven to 180°C (160°C fan).

  2. Heat olive oil in a large ovenproof pan over medium heat. Season the chicken with salt and pepper, then sear on both sides until golden brown. Remove and set aside.

  3. In the same pan, melt the butter and sauté the garlic until fragrant. Stir in the adjika, then pour in the milk. Bring to a gentle simmer.

  4. Return the chicken to the pan, spooning some sauce over the top. Cover and bake in the oven for 30 minutes, or until the chicken is cooked through.

  5. Garnish with fresh coriander and serve with crusty bread or steamed rice to soak up the sauce.
