Our Adjika Summer Rolls are the perfect blend of fresh vegetables, succulent prawn, and the fiery kick of adjika chilli paste. These rolls are easy to make and perfect for a light lunch, or an appetiser at your next BBQ.

Ingredients:

  • 12 rice paper wrappers

  • 200g cooked prawns, peeled and deveined

  • 1 cucumber, julienned

  • 1 carrot, julienned

  • 1 bell pepper, julienned

  • 1 avocado, sliced

  • 50g rice vermicelli noodles, cooked

  • Fresh mint leaves

  • Fresh coriander leaves

  • 3 tablespoons of red adjika chilli paste

  • Soy sauce for dipping


Instructions:

  1. Prep the Ingredients: Start by preparing all the vegetables and prawns. Julienne the cucumber, carrot, and bell pepper. Slice the avocado and cook the rice vermicelli noodles according to the package instructions.

  2. Prepare the Wrappers: Fill a large shallow dish with warm water. Dip each rice paper wrapper into the water for about 5 seconds until it becomes soft and pliable.

  3. Assemble the Rolls: Place the softened wrapper on a flat surface. Layer a few mint leaves, coriander leaves, shrimp, cucumber, carrot, bell pepper, avocado, and a small amount of rice vermicelli noodles.

  4. Add the Adjika: Spread about 1 teaspoon of red adjika chilli paste on top of the filling.

  5. Roll It Up: Fold the bottom of the wrapper over the filling, then fold in the sides and roll it up tightly. Repeat with the remaining wrappers and fillings.

  6. Serve: Serve the summer rolls with a side of soy sauce for dipping. Enjoy the fresh, spicy, and delicious rolls as a perfect summer treat!
