Ingredients
225g pasta of your choice (spaghetti, penne, fusilli, etc.)
2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup chopped bell peppers
1/4 cup sliced black olives
1/4 cup chopped sun-dried tomatoes
2 tablespoons Adjika Chilli Paste
Fresh basil leaves, chopped, for garnish
Grated Parmesan cheese, for serving (optional)
Instructions
Cook the pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, and sauté until softened and fragrant, about 2-3 minutes.
Add the chopped bell peppers to the skillet and continue to cook for another 2-3 minutes until they start to soften.
Stir in the sliced black olives and chopped sun-dried tomatoes, and cook for an additional 1-2 minutes.
Add the Adjika Chilli Paste to the skillet and stir well to combine, ensuring that all the ingredients are coated evenly with the spicy paste.
Add the cooked pasta to the skillet and toss everything together until well combined. If the pasta seems dry, you can add a splash of reserved pasta water to loosen it up.
Once everything is heated through and well combined, remove the skillet from the heat.
Serve the spicy Adjika Pasta in individual bowls, garnished with chopped fresh basil leaves and grated Parmesan cheese if desired.
